New Traulsen Quick Chiller Provides Affordable Option to Safely Chill Food

Print ArticleImprimer l'Article

Traulsen’s new quick chiller moves food quickly and safely from serving temperature to storing temperature at an affordable price. Food is chilled rapidly and safely through the temperature Danger Zone (from 135 degrees Fahrenheit) 57 degrees Celsius to below (41 degrees Fahrenheit) 5 degrees Celsius to prolong the freshness of ingredients and reduce spoilage of product. The quick chiller has INTELA-TRAUL® microprocessor control for precise temperature maintenance, unsurpassed reliability and simple operation.

“The Traulsen quick chiller is designed to chill its entire capacity in as little time as possible,” said John Davis, business development manager, Traulsen. “Food safety is a priority, and the INTELA-TRAUL microprocessor control can help ensure compliance with HACCP documentation.”

Traulsen’s cyclonic airflow system creates a horizontally moving curtain of air that extends from the top of the chiller all the way to the bottom. Centrifugal blowers direct air to chill food without edge freezing or exterior ice formation. The product holding temperatures and product chill endpoint can be adjusted to suit the characteristics of individual foods.

Traulsen’s (48-inch-by-34-inch) 1.22 meter-by-.86-meter quick chiller is easy to operate and durable enough to stand up to years of heavy use. It boasts a stainless steel interior and exterior, cabinet interior and door liners. The cabinet exterior front is a one-piece louver assembly, and doors are constructed of high-grade 20-gauge stainless steel. The exterior cabinet top, sides, back and bottom are heavy-gauge aluminized steel.

Each door has two chrome-plated wire shelves mounted on shelf pins. Optional tray slides are also available and can be used instead of shelves to accommodate sheet pans ranging from (18-by-26 inches).46-by-.66 meters to (14-by-18 inches).36-by-.46 meters. Each section can accommodate doors or drawers. Drawers can be designed as two levels of 6-inch-deep pans. Traulsen’s quick chiller also comes equipped with self-closing doors that include a stay-open feature, letting you keep them open a full 120 degrees, making it easier to stock or remove items.

Like all Traulsen products, the quick chill is supplied with environmentally friendly CFC-free refrigerants and CFC-free foam insulation.
